Grain-free Granola for Breakfast
Sometimes I would like to have a crunchy breakfast. A smoothie is always great, nothing at all is my favorite breakfast, an egg with a slice of bread is perfect and guacamole without nothing else is the best ever! But some days there is dissatisfaction with all of it and I want ‘crunch’…
So today I prepared some granola to eat alone or with some almonds milk or in a smoothie. It is super easy to prepare your own granola. And the best is: you know what is in. You can vary the recipe, take different nuts or seeds and even change the oil into olive oil, if you like.
The procedure is always the same: mix all and bake it in the oven until it’s golden. Let it cool well and transfer into air-tight container. The granola can be stored for a couple of weeks… if it lasts so long.

Preheat the oven on 175°C/350°F.
In a small sauce pan add the honey, the coconut oil and the vanilla. Put on the fire and let all melt well. Stir all the time so nothing can burn. When the ingredients are melted, take off the heat and let it cool a little bit.
Meanwhile add all the rest of the ingredients into a big bowl and mix them. Then add the honey-oil mixture and stir well until all is combined.
Now put some parchment paper on a baking tray and transfer the granola mixture on it. Make an even level and move to the oven. Let it bake and get golden for 20 minutes.
Take out of the oven and let it cool well. Now transfer the ready granola into air-tight containers.
