Ingredients
Dry ingredients
- 1/4 cup flax seed flour
- 3 tbsp (leveled) coconut flour
- 1 tsp (heaped) baking soda
- 1/2 tsp salt
Wet ingredients
- 3/4 cup almond butter
- 1/4 cup olive oil
- 3/4 cup warm water
- 1 tbsp apple cider vinegar
- 2 eggs
- 1 tsp raw honey

Instructions
- Preheat your oven to 180° C and put some baking parchment into you loaf form.
- In a bowl mix the flax seed flour, coconut flour, salt, baking soda and the three tablespoons of (previously grind) flax seed and mix them well.
- In the blender put the two eggs, the honey, the olive oil and all the water. Close the top and give it a short pulse just to pre-mix the liquid ingredients.
- Now add the dry ingredients and blend all for half a minute. It comes out a very soft but not liquid dough.
- Pour the sandwich batter into the loaf form and bake it for around 30 minutes
- Let it cool for a few minutes in the loaf pan and then take it out and let it cool completely on a rack.
Recipe Notes
The bread is very soft, like a real toast or sandwich bread. You can toast it as well, comes out great.
