Ingredients
- 80 gr almond meal
- 120 gr icing sugar
- 50 gr granulated sugar (erythritol e. g.)
- 2 egg whites
- some drops bitter almond
Servings: cookies
Instructions
- Preheat oven to 180°C/350°F.
- Mix the almond meal, icing sugar, erythritol and the drops of bitter almond in a larger bowl.
- Beat the egg whites until stiff.
- Add the egg whites slowly with a wooden spoon that the whole forms a fluffy light batter.
- Put spoon-wise little batches on a cookie pan with parchment paper.
- Set aside for 10 minutes before baking in the oven for 10 minutes.
- Let them cool out well.
Recipe Notes
Don't worry if the cookies coming out of the oven are still soft. They will harden when they cool out. It's similar to the meringues.
You can store them in an air-tight box.
