Do it happen to you as well that you need some fruit or veggies for a menu and then you have a leftover of that fruit or veggies? It happened just a short time ago to me. I needed some avocado for a smoothie I wanted to try and then I had half of that gigantic avocado. For days I moved it from the right to the left in my fridge, thinking I want to turn of the fridge, summer time is gone, it’s useless now. But still had that one and only avocado sitting in the fridge and waiting for something exciting.
That came in the morning when I opened my Facebook page and saw some great photography of avocado butter. That’s it! Sound great, looks mouth-watering and my poor avocado finally will have a great end.
So I took some ghee, peeled a garlic glove, some fresh salt and pepper and the half avocado. She seemed to sing to me. She will go to be something super tasty and not die in the fridge useless.
Mixed with just a hand mixer it came out to be a super hooper tasty butter in a light green color.
The next morning I had my garden girl over and she likes my kitchen experiments. So some pancakes were fast made and with them the avocado butter. She literally loved it! Me too of course.
Tomorrow I will bring it to my friends with the paleo restaurant. The butter is great with meat as well! Or for crackers with some tomato, cucumber or (paleo) cheese on. Ooohhh…. I see a lot of great dishes here!
Who ever tried avocado butter and with what do you like it most?

- 1 avocado (only meat)
- 1 glove garlic (peeled and sliced)
- 150 gr ghee (soft)
- 1/2 tsp salt
- pinch fresh ground pepper
- Put all the ingredients into a blender and mix until all is perfectly combined.
I used a hand blender. Was working as well. You can add of course also different spices like chili or coriander or what your favorite spice is. Don't overdo with garlic, it could be too strong for some.
I had half an avocado because mine was huge. A normal sized one should be whole (peeled and pitted of course).
Serve when a little soft as it is much better spreadable.
