The Best Dessert Ever – Homemade Almond Ice Cream

It is years I don’t eat ice cream anymore. And I was always an addicted one to this creamy, tasty dessert. But when I lived in Turkey I couldn’t find really good ice cream and when I started to live in Ireland.. the weather was always too cold for eating something frozen. And now I am often again in Italy, the land of ‘real’ ice cream, and I changed my diet years ago that doesn’t include sugar and dairy.. which is ice cream.

So now I decided I will buy a very small ice cream maker and try it at home. And so I did. My little ice cream machine arrived a few days ago and I had fresh strawberries at home, some coconut milk and honey. All the ingredients for an ice cream. AND: sun was shining outside. Yes.. that is the fourth and maybe the main ingredient for my ice cream!

Reading the instructions for this little machine I saw: 175 ml of milk. OK, coconut milk will be the same. A maximum of 250 ml can go into the machine. That’s fine as well, just two portions and that’s what I wanted. I first have to find out if I still like ice cream and will do it at home before I buy a bigger and more expensive ice cream maker.

I put all ingredients (omitting the sunshine 😀 ) into a blender, mixed well and then into the already ice-cold machine. After half an hour the ice cream was still too liquid and I put the whole ice cream pot into the freezer again. After another hour the ice cream was perfect and I could eat my very first ice cream in over ten years.

A few days later I tried the tastiest ice cream and my absolute favorite one: almond ice cream. Again coconut milk and honey, but then almond puree and some bitter almond drops. Oh yes! It was the best ever ice cream in my life! I can’t imagine anything more tasty than this. I think my summertime I will have with this ice cream maker….

Instructions
  1. Put all ingredients in a blender and mix well.
  2. Transfer the liquid into the ice maker machine and let it work until the ice cream has the consistence you want to.
  3. Put two ice cream balls in a small bowl, decorate with some sliced almonds and serve.
Recipe Notes

Instead of the almond puree you can take any other taste. Fresh strawberry puree is amazingly tasty as well. That was my very first try and I loved it! Of course then you omit the almond extract.

Instead of sliced almonds on the almond ice cream you can poor also chocolate sauce, any fruit sauce or eat it as it is. Cinnamon is perfect as well.
