Spicy Cauliflower Soup

Wintertime is on its way – though outside there is blowing the Scirocco and it’s warm, 18°C. But this period I extremely love to eat soups. All kinds of soups, but especially veggie-soups.

So this time I made a very simple cauliflower soup. A habit of mine is to put all imaginable spices in the food I am cooking. So in this soup you will find not only a little salt and pepper but also turmeric, nutmeg and chili.

Instructions
  1. Clean the cauliflower head from its leaves. I always let the inner leaves and cook them as well. Cut the cauliflower into smaller pieces and as well a good part of the stem.
  2. Clean the sweet potato and cut it into smaller pieces as well.
  3. Clean the onion and garlic and dice.
  4. In a bigger pot put some olive oil and let the onion and garlic brown.
  5. Add the vegetables, the vegetable soup and all spices.
  6. Let it cook for half an hour or until the vegetables are soften.
  7. Take a handblender and blend until all is creamy.
  8. Serve hot and garnish with some greens like parsley.
Recipe Notes

If you have some paleo bread or crackers they are going well with the creamy soup.
