Ingredients
Dry ingredients
- 30 gr almond meal or flour
- 25 gr coconut flour
- pinch salt
- 1 tsp honey
- 1/4 tsp backing soda
Wet ingredients
- 2 eggs
- 1 tsp fresh ground lemon zest
- 3 tbsp coconut milk
Servings: whoopies
Instructions
- Pre-heat the oven to 180°C.
- Mix all the dry ingredients well in a bowl.
- Do the same with the wet wet ingredients.
- Then join the wet and the dry ingredients and mix well.
- Now take a spoon and put the dough in a forcing bag with a large opening.
- Put the dough with the forcing bag onto the baking paper previously laid on the baking pan and create 8 circles, 0.5 cm high.
- Now bake for not more than 10 to 12 minutes
- Take them out and let them cool out before any frosting is added on their backside.
Recipe Notes
As a frosting you can put a lot of different types. Honey is working as well as jam and marmalade. I liked my jam in the middle of them. But I tried them also with a creamy cheese-lemon one (nut cream cheese, lemon zest, a little honey). Really very fresh! Especially great in summer.
Very nice to give the whoopies a color, I didn't have any unfortunately when doing them. Try to put two different colors and the frosting as third color. For example for flag-looking whoopies.
