Instructions
  1. Preheat your oven to 180° C and put some baking parchment into you loaf form.
  2. In a bowl mix the flax seed flour, coconut flour, salt, baking soda and the three tablespoons of (previously grind) flax seed and mix them well.
  3. In the blender put the two eggs, the honey, the olive oil and all the water. Close the top and give it a short pulse just to pre-mix the liquid ingredients.
  4. Now add the dry ingredients and blend all for half a minute. It comes out a very soft but not liquid dough.
  5. Pour the sandwich batter into the loaf form and bake it for around 30 minutes
  6. Let it cool for a few minutes in the loaf pan and then take it out and let it cool completely on a rack.
Recipe Notes

The bread is very soft, like a real toast or sandwich bread. You can toast it as well, comes out great.
