  1. Preheat the oven to 180°C and put a parchment paper in a pie pan (25×20 cm) or small baking tray.
  2. Now put all the wet ingredients in a blender and mix them well. Then add the dry ingredients and mix well (if you can time it, put on 30 seconds).
  3. Meanwhile cut the plums into halves and take the stones out.
  4. Pour the lightly liquid dough into the pie pan or baking tray. Place the plum halves on the dough, as narrow as possible as you want it later full of juicy plums.
  5. Bake the plum cake for around 35-40 minutes, it depends by your oven. It should be golden and dry where the dough only is. Proof with a tooth stick.
  6. Take it out and let it cool out.
Recipe Notes

Cut the cake into squares and put some sugar (Sukrin) mixed with cinnamon on the top. The plum cake is even better the day after because it gets more juicy over night. Very quick to do and if you triple the recipe you can do even a high baking tray. In that case take at least 2 kg of plums like I did.
