Muffin Rolls – Paleo, Gluten-free, Yummy

After I found out that the paleo diet is exactly what matches with my way of eating – because it doesn’t use sugar and wheat flour – I finally had an idea where to look for recipes. And I found this bread or better roll recipe.

The first time I tried them out I thought: doesn’t work. But the second time they were perfect and I enjoyed them with my own homemade sugar free jam and some nice Vegan spreads which I bought. I stored them out of the fridge for 5 days – then I had the last one. I ‘toasted’ them lightly in the oven before eating – I like the crunch in the bite.

They are substantial although they are tiny. So don’t underestimate the muffin rolls and have all at once!

Ingredients

Instructions
  1. Preheat oven to 160°C.
  2. Divide eggs and beat the egg whites with some salt until stiff.
  3. Beat the egg yolks as well and add spoonwise coconut oil and vinegar. Stir well.
  4. Join the egg white to the egg yolks and combine carefully
  5. In another bowl mix well the dry ingredients.
  6. Add the dry mixture to the egg mixture.
  7. Put 1 tablespoon in each muffin form and bake for 25 minutes.
  8. Take out of the oven and let them cool out on a cooling rack.
Recipe Notes

Put seeds of your choice, only one type or mix different.

For a sweeter taste you can put a teaspoon of honey. If you like the rolls more 'rustic' add herbs and spices at your choice.
