Irish Tea-Time with Walnut Scones and Strawberry Jam

I love handcrafts. I am so interested in people who have a great idea and do beautiful things out of apparently nothing. And I love the country-style living. And of course all of the great colors, textures, the old-look of furniture and that stuff. So it was normal that one of the first shops I looked around when I came to Ireland was such one. A friend of mine directed me to Kells where is an old country house shop with exactly this kind of living-style.

When I came the first time I had to look around to find it because it’s a little bit outside of the town-center of Kells. But I followed the signs indicating the country house shop. A pair of peacocks came to say hello when I arrived and slowly gone away when I approached them. The house has a U-form and that is the shop too. On two stores they show a lot of beautiful ideas, art and life-style. Tea-pots, carpets, furniture of all kind, nice jewelry, funny ideas for x-mas and a lot more. It took me around two hours to see all.

Of course, I came a few more times and one of these I came with a friend who knows very well the owner-ladies. And they invited us for tea and scones. I enjoyed it to sit near to the open fire as it was winter and very cold outside. A rocky chair with a nice soft pillow, a hot tea and some tasty scones. Is there anything else to wish?

Just the other day I stumbled upon a recipe with just those nutty scones I had there. I am sure they were baked with wheat flour than but I had the recipe with nut meal and that is exactly what I eat. I wanted to try them out!

Instructions
  1. Pre-heat oven to 150°C.
  2. Take a big bowl, put all the dry ingredients and stir to combine well.
  3. In a blender put eggs, maple syrup and coconut oil and mix well until perfectly combined.
  4. Add the wet ingredients to the dry ones and combine well.
  5. Take a forcing bag with a large mouth, give the dough into the bag and make 5 cm big rounds on baking sheet on the baking tray. Let them 1 cm high.
  6. After you used all the dough make a buckle in the middle of each biscuit and put a blob of jam in each buckle.
  7. Put into oven for 15 - 20 minutes until light golden.
Recipe Notes

Who doesn't like or get maple syrup can take honey.

Instead of the strawberry jam you can try any type of jam. Try out with others like cherry jam or kiwi jam maybe.

I stored the scones for 4 days out of the fridge without any problem. They were still great.

Yes, I remember that occasion too H. I was over there again before last Christmas and met one of those ladies. not as much stock as that occasion when you were there but just as interesting, and stylish.

Don, I love that shop and for sure will find now a lot of things I could use in my photographs. And I loved sitting in front of the open fire then and having a hot chocolate, the scones, listening to your chats.. real relaxing moment.
