I wanted to start a grape therapy because a Chinese physician told me it would do me a lot good. And it’s also time of grapes . But I can’t do right now a 4 weeks therapy with grapes as I will be on the road for the next weeks
So I decided too leave it and maybe do it later in mid October. And as I don’t go too much crazy for grapes I thought I will do something else with them I can use in the therapy maybe as well. Some jam.
For a jelly jam I put more than a kilo of rosé grapes into a fruit juicer. I got out a little less than a kilo. So I squeezed the fiber as well and immediately I had more than a kilo. Great, I drank the too much juice 😀
Next I just put some carob and a little lemon juice into the pot. I heated and let it cook for a while until it appeared very dense.
Now out into the hot jars, closed and upside down for five minutes. When the jars are cooled out you can store them. Jam normally is perfect even after a years.
- 1,4 kg grapes (red, white or rosé)
- 10 gr carob bean gum
- 1 squeeze lemon juice
- 1/4 tsp cinnamon or vanilla (optional)
- 10 drops bitter almond extract (optional)
- Juice the grapes in order to have i liter or kilo of grape juice.
- Transfer the juice into a cooking pot and squeeze some lemon juice in.
- Add the carob bean gum and mix well. Don't get clumps in the juice!
- Now put to boil for 10 to 15 minutes until you feel the jam is thickening. Stir most of the time. Now add some cinnamon or vanilla and the bitter almond drops.
- transfer the jelly jam into the hot washed mason jars, close them well and turn them for 5 minutes upside down.
- When cool you can store them.
