As I had a friend heading over for late dinner I prepared some sauces to dip or put on a slice of bread. Of course, I had my mayonnaise and a kind of tomato spread which could be easily ketchup.
The totally new sauce was my queso dip made with cashew nuts.
I let them soak overnight. Nutritional yeast and a lot of spices made a super yummy queso sauce or spread. I wonder how the ‘real’ one would be. My last queso dip with nachos I had, I believe, last century….
I hope you enjoy it as I did.. just as a spread on homemade paleo bread, on veggies or with paleo nachos or chips.
Ingredients
- 1 cup cashew nuts (soaked overnight)
- 1/3 cup water
- 1 tsp sea salt
- 3 tsp fresh lemon juice
- 3 tbsp nutritional yeast
- 1/2 tsp curry
- 1/2 diced onion
Servings: glass
Instructions
- Put all the ingredients except the water in a high speed blender or food processor. Add only half of the water.
- Blend until the queso dip is smooth and creamy. Add some more water if you think it's too dry.
- Store in a mason jar in the fridge until you serve the dip.
