It’s since I started my paleo diet in 2012 that I am trying every now and then to find a ‘perfect’ bread. My buckwheat bread IS perfect but sometimes I don’t like the buckwheat. Sometimes it’s nice to eat a light bread with less own taste.
So I look up recipes in the night time just before going to bed. And so it happens I write down some recipe which sounds interesting and worth to try one day. Unfortunately I forget then where I found it and can’t have a second look – a visible impression to remember why I liked that one – and of course not giving credit to the page.
So that happened with this sandwich recipe. A friend of mine who started the paleo diet just a few months ago and still has sometimes a craving for bread while eating with non-paleo family asked me for a bread to eat with her homemade jam. She doesn’t like the buckwheat taste. So I looked up my papers to find one. This is the one I found and tried yesterday.
And it has full approval by everyone! All like it and it will be an every day bread for my friend in future. It’s incredibly simple and fast to do.
This sandwich bread is perfect for my long travels I often do by car. Instead of only eating salads I can prepare some sandwiches at home with tuna salad, mayonnaise, sliced eggs, tomatoes or what ever comes into my mind and I find in my fridge. And my jam will be eaten this wintertime as well. Thank you Luisa for pushing me always to try something new, I love you!
- 1/4 cup flax seed flour
- 3 tbsp (leveled) coconut flour
- 1 tsp (heaped) baking soda
- 1/2 tsp salt
- 3/4 cup almond butter
- 1/4 cup olive oil
- 3/4 cup warm water
- 1 tbsp apple cider vinegar
- 2 eggs
- 1 tsp raw honey
- Preheat your oven to 180° C and put some baking parchment into you loaf form.
- In a bowl mix the flax seed flour, coconut flour, salt, baking soda and the three tablespoons of (previously grind) flax seed and mix them well.
- In the blender put the two eggs, the honey, the olive oil and all the water. Close the top and give it a short pulse just to pre-mix the liquid ingredients.
- Now add the dry ingredients and blend all for half a minute. It comes out a very soft but not liquid dough.
- Pour the sandwich batter into the loaf form and bake it for around 30 minutes
- Let it cool for a few minutes in the loaf pan and then take it out and let it cool completely on a rack.
The bread is very soft, like a real toast or sandwich bread. You can toast it as well, comes out great.
