A Fig Nut Cake for Christmas – Panforte my Version

Christmas is here and the invitation to family reunion to my friend’s house. I always bring something to eat and this time I was really running out of ideas. Torrone made of nuts and honey.. great idea… too much work! What about the oh so famous Panettone? A lot of work again, had no time. And what about a fig nut bread? Fast and something so typical as nuts and figs as ingredients. Would it ‘work’? It did! They loved it!

This is my version of Panforte, a famous Christmas cake in Italy.

Instructions
  1. Preheat the oven on 180°C and put some parchment paper into a loaf tin.
  2. Mix all the nuts in a large bowl.
  3. Put the eggs and the honey into a blender and pulse just a few times in order to get all mixed well.
  4. Now fill the loaf tin with the fig nut mixture and add the beaten egg-honey mixture.
  5. Let it bake for an hour int he oven. Be careful it doesn't burn on the top.
  6. Get out of the oven and let cool on a cooling rack.
Recipe Notes

The fig nut loaf is best the day after as it cools out perfectly and all gets more moisture.

You need a good knife to cut it. Doesn't matter if it breaks as the taste is always the same: super yummy.

The nuts are as your taste. The mixture should arrive at 700 gr together with the honey. Maybe you like more figs? Or you like dates and prunes as well? Different nuts? Who likes it can add candied fruits as well.
