A 50th Birthday and a Perfect Marbled Chocolate Banana Cake

This is the winter I have a lot of friends celebrating their 50th birthday. Of course most of them (all!) are partying. Honestly I am not sure why people have to celebrate themselves to be born. I have a really strange way of thinking about this – or at least for Europeans as they always celebrate themselves. I believe that others should be happy that I was born and walked into their lives and so they should celebrate the day I came to earth and share my life with them.

Well, fact is that my friends know I am free to arrange my life and so one of them asked me if I could stay with her for a few days to help preparing for the party. Of course I am happy to do so and was enthusiastic to go.

But like with every invitation quickly came the question: what do I eat when everyone has a wide range to choose at a buffet? I decided that there will be a lot for me as well, only the sweet tooth needs a little help. And so I had a journey through the world wide web for the perfect cake I can offer also to other people. And they would not make a face and ask “What the hell is that?”.

I found the perfect cake on PaleOMG. And the cake came out perfect!

So I left the very next day to stay with my friend and her family for 4 days. We had a lot of fun and a whole 12 hour day just in the kitchen to prepare. Various soups, 4 kinds of salads and meat, dips and of course fruit, cheese, cakes and more. It was like for a 100 people and very funny to buy so much. 

The birthday celebration was a full success. In the morning with more than 20 small children from the Kindergarten she works, from lunch time until late with all her adult friends. I did the kitchen maid and so the next day we had just  to change the leftovers from big bowls into smaller ones as it was all already clean.

Hey, someone needs some party help and offers board and lodge for free? Here I am 😀 Would be a funny job..

Instructions
  1. Preheat the oven to 180°C and prepare the muffin forms with paper liners or use the mini cake form as I did.
  2. In a bigger bowl put all the wet ingredients (from bananas to almond milk). Mix them well by hand or a hand mixer.
  3. In a smaller bowl mix the dry ingredients.
  4. Add the dry ingredients into the wet ingredients and mix well again.
  5. After this divide in two parts. In one part mix the cocoa powder and the melted chocolate.
  6. Now you have one vanilla part and one chocolate part. Scoop 2 tablespoons of both batters in every mini cake pan and swirl the spoon through the batter to form the marbling or just let one side chocolate and one vanilla - as you like.
  7. Bake for 30 to 40 minutes. Take a tooth-pick to see if ready.
Recipe Notes

The original recipe is a little different. It has maple syrup instead of honey and coconut milk instead of almond milk.

Out of the fridge in an airtight container they can be stored at least for 4 days.

This recipe can be changed, for example with rum, x-mas spices, covered with chocolate. Fresh and perfect for summer with lemon or maybe used as a base for fruit cakes.

They are great with whipped cream as well. Or try them for breakfast with your morning coffee or tea. That is a typical breakfast in Italy.
